I feel like I'm allergic to everything. Growing up I always had to ask...does that have nuts, almonds, eggs, etc. I always envied the classic PB&J! I was talking with My Man one evening on how cool it would be to whip up a quick PB&J, especially now since I'm chasing our one year old around. If there isn't left overs at hand, sometimes it's a challenge making something with the quickness. Jorge, a.k.a. My Man, has always encouraged me to at least try a lil jelly sandwich. My response was always...."Eh! NO!!". My response is due to fear...growing up, everytime I attempted a jelly sandwhich I would always encounter enough peanut butter to swell my lips and make my throat itchy. Jorge insisted he never dips peanut butter into the jelly, I trusted him and gave it a try. I became obsessed with jelly sandwhiches. One night while doing some googling I was on the hunt for an alternative....lo and behold I discover I.M. Healthy Soynut Butter. I went out and bought it right away. I had Jorge and my sister try it and they said it was very comparable. Finally I had my first "PB&J"! It was so yummy and I felt so cool! It is a great alternative made from non-gmo soybeans and it does not need refrigeration. It can be found at Fresh and Easy neighborhood Markets, Sprouts, and even Target. I find that Fresh and Easy has the best deal, less than $5.
