Banana Chocolate Chip Muffins

I always have a sweet tooth, so I love having homemade baked treats around. I also find baking very relaxing and gratifying. I love making these because I always have a couple extra ripe bananas and I hate to let them waste. This recipe is very quick and easy.

2 Cups - Brown Rice Flour
1 Cup - Coconut Sugar
1 Tsp - Baking Powder
1 Tsp - Baking Soda
1/2 Tsp - Cinnamon
1/4 Tsp -Salt
3 Tbsp - Flax Meal
4 Tbsp - Warm Water
1/2 Cu - Applesauce
1/4 Cup - Vegan Mini Chocolate Chips
2 Ripe Bananas

Preheat Oven to 350°

Lightly grease 12 Cup Muffin Pan

Mix flax meal with warm water and set aside.

Mix all dry ingredients well and set aside.

Mash bananas and add to flax meal. Add in applesauce and mix well.

Combine all dry ingredients with wet ingredients in a large bowl and mix well.  

Slowly stir in chocolate chips. (I love Enjoy Life Foods Mini Chocolate Chips)

Evenly distribute mix into muffin pan, fill each about 1/4 full.

Bake approximately 15 mins or until lightly golden. Test the center with toothpick.

Remember to let them cool before removing.
